Santoku’s are great general purpose kitchen knives originating in Japan. Used for many tasks like slicing, chopping, and dicing on both vegetables and meats.
Construction: The blade is 3mm thick 1084 high carbon steel with a Tsuchime finish. High carbon steels allow for a higher hardness and sharper edge than their stainless steel counterparts. This does result in less corrosion resistance but when cared for properly, this is not an issue. The edge length (in a straight line from the heel to tip) is 150mm (+/- 5mm). The handle is length 125mm (+/- 2.5mm) and is shaped octagonally providing good grip but still remaining comfortable.
Handle Type 1 (IMG 1,2,3) consists of an Ebony bolster, a nickel silver spacer, and Tasmanian Blackwood for the primary handle material.
Handle Type 2 (IMG 4,5,6) consists of an Ebony bolster, a brass spacer, and Beech for the primary handle material.
